There's something that leaves me cold aboutSoulcalibur V and I'm having a hard time putting my finger on it.

I could complain a bit more about how I don't really have a character to fall back on in the roster, but that'd be reasonably petty. There's a big enough roster that you can probably find someone you like, and the few new guys are pretty interesting....

The easy way to put it? SoulCalibur V is one hell of a good looking fighting game. The environments sparkle with detail and the animations are smooth and buttery. The downside? Some of the worst load times in recent memory.
